The first juice was kept separate and extracted at very low pressure to produce the free-run must that forms the heart of the Bravade cuvée. It was cold-settled and stabilised for four to five weeks at 5–6°C, with regular bâtonnage, before a slow alcoholic fermentation lasting three to four weeks at 14–20°C.
