The grapes are hand-harvested, inoculated with a selected biodynamic yeast culture and fermented dry on their skins. After gentle pressing, the wine undergoes malolactic fermentation in tank before maturing for 18 months in oak barrels: 50% new, 25% one-year-old and 25% two-year-old.
