The old Sangiovese vines, many more than 50 years old, benefit from a favourable microclimate and are cultivated using sustainable methods. After careful manual selection, the grapes are fermented in temperature-controlled stainless-steel tanks with naturally occurring yeast and submerged-cap maceration, followed by malolactic fermentation.
