The vines’ roots reach compact limestone beneath the surface, which helps limit growth and maintain water reserves. After gentle pressing and static settling, the must undergoes temperature-controlled primary fermentation with selected yeasts. A second fermentation takes place using the Charmat method in autoclave over approximately 30–40 days, followed by three months on fine lees to build texture and balance.\u003c\/p\u003e\u003cp\u003e\u003cstrong\u003eFood \u0026amp; Serving\u003c\/strong\u003e\u003cbr\u003eServe well chilled, around 6–8°C, as an aperitif or alongside seafood, delicate fish dishes, vegetable starters and fresh cheeses.
