Once fermentation begins, colour and flavour are extracted through regular pumping over. After around three weeks, the wine is transferred to oak barrels, 20% of which are new, for 12 months. Their son Jean-Baptiste joined in 2000 and helped refine both vineyard practices and winemaking.
