The vineyards are trained using the Guyot system and cultivated according to organic farming principles. The calcareous soils, grey marl and sandy components contribute both tension and a well-defined tannic structure. The grapes are harvested by hand in early October, then fermented in temperature-controlled stainless-steel tanks for around 15 days, with frequent cap management to encourage the extraction of colour, aroma and polyphenols.
