Nebbiolo is harvested between the beginning and middle of October, then destemmed and crushed before high-temperature fermentation with frequent remontage. Skin maceration lasts approximately ten days, followed by malolactic fermentation. The wine matures for around one year in French oak barrels and large wooden casks, then spends a short period in stainless steel before completing its ageing in bottle.
