More than 25 years after the vintage, it is entering an appealing early stage of maturity while retaining the backbone for long-term cellaring.

Tasting Notes
The wine remains deep in colour, with aromas of blackcurrant, plum, blackberry and dark cherry layered with floral notes, liquorice, spice and a subtle mineral character. On the palate, ripe, concentrated fruit is wrapped in a full, velvety texture, with firm yet integrated tannins and a long, warming finish.

Enjoy it now as it begins to show maturity, or cellar it further: its structure is expected to support development through 2060 and beyond.

Food & Serving
Serve lightly chilled at 16–18°C. Stand the bottle upright for a day before opening, then decant carefully to separate the wine from its sediment. Allow four to eight hours of air before serving. Its dark fruit and structure pair especially well with Stilton and other blue cheeses, dark chocolate, walnuts and berry desserts; it also makes a fine after-dinner wine on its own.

Producer
Fonseca is a historic Port house, founded in 1815 and recognised for Vintage Ports with generous, expressive fruit and a firm structure built for ageing. The 2000 vintage is a notable example of that house style, with both Wine Advocate and Wine Spectator awarding it 96 points.
