Grapes are carefully selected and harvested by hand to ensure optimal ripeness and healthy bunches. The wine is first vinified as a classic Valpolicella, then undergoes the traditional Ripasso process, where it is refermented on the pomace of dried Amarone grapes to gain extra body, flavour intensity and texture.
