Domaine Michelot limits anti-disease treatments and instead follows a carefully planned ploughing programme to maintain healthy soils, while the best grapes are selected by hand at harvest. The bunches are gently crushed before a 6–12-hour cold maceration on the skins. Fermentation takes place in wooden barrels, followed by 100% malolactic fermentation.
