The nose is expressive and layered, with ripe red and dark berries, garrigue, violet, liquorice and subtle spicy notes from oak maturation.\n\nOn the palate, it is rich and full-bodied, yet notably fresh and energetic. Juicy raspberry and blackberry flavours are framed by supple tannins, gentle spice and a savoury mineral character, with a long, balanced finish. The wine can be enjoyed young for its fruit and vitality, but has the structure to develop further complexity over approximately 10–15 years when properly cellared.\u003c\/p\u003e\u003cp\u003e\u003cstrong\u003eProduction\u003c\/strong\u003e\u003cbr\u003eThe wine comes from the Chaupin vineyard, a prized parcel within Domaine de la Janasse’s mosaic of more than 60 separate plots in and around Châteauneuf-du-Pape. Made from 100% Grenache, the grapes are traditionally vinified with an extended 22-day maceration on the skins to extract colour, flavour and texture. Maturation takes place in a combination of 30% new oak barrels and 70% large oak foudres. The wine is bottled unfiltered to preserve its character and depth, so a light deposit may develop with age.\u003c\/p\u003e\u003cp\u003e\u003cstrong\u003eFood \u0026amp; Serving\u003c\/strong\u003e\u003cbr\u003eServe at approximately 16–18°C. Cuvée Chaupin is an excellent partner for roast lamb, beef or venison, Provençal stews, duck, grilled meats and richly flavoured dishes with herbs, garlic or spices. It also works well with mature hard cheeses. Decant for 1–2 hours when serving young to allow the wine’s aromas to open; older bottles should be decanted carefully, primarily to remove any sediment.\u003c\/p\u003e\u003cp\u003e\u003cstrong\u003eProducer\u003c\/strong\u003e\u003cbr\u003eDomaine de la Janasse was founded in 1967 by Aimé Sabon, who took over the family vineyards in Courthézon and chose to establish an independent estate rather than continue supplying grapes to a cooperative. What began with 15 hectares has grown to around 90 hectares, with Aimé’s son Christophe joining in 1991 and his daughter Isabelle becoming part of the team a decade later. Thanks to its many fragmented parcels and varied terroirs, the domaine produces some of the most complex and individual cuvées in Châteauneuf-du-Pape, including Chaupin, Les Garrigues, Terre d’Argile and Terre de Bussières.
