On the palate, the wine is full-bodied yet notably fresh, with concentrated fruit, refined tannins and a long, savoury finish. The grapes undergo a 22-day maceration on their skins to extract colour, structure and flavour. The wine is then matured in a combination of 30% new oak barrels and 70% large oak foudres. Named after the family farm in Courthézon, the domaine has grown from 15 hectares to around 90 hectares and is now managed by Aimé alongside the next generation, including Christophe Sabon and Isabelle. With more than 60 separate parcels, Domaine de la Janasse draws on a remarkable mosaic of terroirs and has become one of the leading names in Châteauneuf-du-Pape.
