The grapes are vinified according to traditional Châteauneuf-du-Pape methods, with a 22-day maceration on the skins to extract colour, aroma and structure. After fermentation, approximately 30% of the wine is matured in new oak barrels, while the remaining 70% rests in large oak foudres. What began with around 15 hectares has grown to approximately 90 hectares, spread across more than sixty parcels and a mosaic of diverse terroirs. Christophe Sabon joined his father in 1991, followed by Isabelle in 2001, and together the family has established Domaine de la Janasse as one of the leading names in Châteauneuf-du-Pape.
