On the palate, it is full-bodied and concentrated yet remarkably fresh, with supple tannins, polished fruit and a long, savoury finish marked by spice and Mediterranean herbs.\n\nAlthough approachable in its youth, the 2020 Cuvée Chaupin has the structure and concentration to develop beautifully over the next 10–15 years when stored in a cool, dark cellar. With time, the fruit should evolve toward more complex notes of dried herbs, leather, truffle and spice.\u003c\/p\u003e\u003cp\u003e\u003cstrong\u003eProduction\u003c\/strong\u003e\u003cbr\u003eThe Grenache for Cuvée Chaupin comes from the old vines of the Chaupin vineyard, where warm Mediterranean conditions are balanced by sandy soils and the region’s characteristic stony terroir. The grapes are harvested with great care and undergo a cold maceration followed by approximately 22 days of skin fermentation, allowing the wine to extract colour, aroma and flavour while preserving freshness. It is matured with 30% in new oak barrels and 70% in large oak foudres, and the finished wine is bottled unfiltered to preserve its natural character.\u003c\/p\u003e\u003cp\u003e\u003cstrong\u003eFood \u0026amp; Serving\u003c\/strong\u003e\u003cbr\u003eServe at 16–18°C after allowing the bottle to come up gradually from cellar temperature. Decanting for around 1–2 hours is recommended, particularly in its youth, to open the wine’s aromas and soften its structure. Its generous fruit and savoury depth make it an excellent partner for roast lamb, beef, venison, duck, hearty stews, grilled meats and richly flavoured Mediterranean dishes.\u003c\/p\u003e\u003cp\u003e\u003cstrong\u003eProducer\u003c\/strong\u003e\u003cbr\u003eDomaine de la Janasse was founded in 1967 when Aimé Sabon took over the family vineyards in Courthézon and chose to establish an independent estate rather than continue supplying grapes to a cooperative. From an initial 15 hectares, the domaine has grown to around 90 hectares, spread across more than 60 parcels that form a remarkable mosaic of Châteauneuf-du-Pape terroirs. Aimé’s son Christophe joined him in 1991, followed by his daughter Isabelle in 2001, and together the family has established La Janasse as one of the appellation’s most respected producers.
