The grapes were carefully hand-harvested, then dried for around four months using the traditional appassimento method, which concentrates flavor, sugar and aroma before a slow fermentation preserves natural sweetness.\n\nProduction follows the same exacting standards as Dal Forno’s Amarone, with severe grape selection, very low yields and maturation in new French barriques.
