With its fine bubbles, chalky freshness and very dry Extra Brut profile, it offers an elegant expression of Alta Langa and continues Cocchi’s long tradition of sparkling-wine production, which dates back to 1891.

Tasting Notes
Bright and refined in appearance, the wine shows a delicate mousse and a fresh, elegant character. The bouquet combines white hawthorn and yarrow with lively citrus aromas, while subtle mineral and maritime nuances add complexity.

On the palate, it is crisp and dry, with a pronounced chalky salinity and a clean, linear structure. Notes of citrus, Mediterranean herbs, white pepper and a delicate nori-like savouriness emerge on the finish. The 46 months of lees ageing provide additional texture and depth, while the wine’s acidity gives it the structure to develop further in bottle over the coming years.

Production
The grapes are sourced from organically farmed vineyards in the Monforte d’Alba area, planted on pale marl and limestone soils at more than 250 metres above sea level, with west-facing exposure. Chardonnay and Pinot Noir are harvested by hand and vinified separately in stainless steel tanks without oak. The must settles at low temperature without fining agents, after which the wine undergoes a second fermentation in bottle according to the traditional method. It then matures on its lees for 46 months before being finished with an Extra Brut dosage.

Food & Serving
Serve well chilled at approximately 8–10°C in a tulip-shaped sparkling-wine glass to preserve both its freshness and aromatic detail. Its dry, saline profile works beautifully with oysters, shellfish, sushi, grilled fish and delicate seafood dishes, while its structure also makes it a fine match for fried appetisers, soft cheeses and refined antipasti. Decanting is not normally required, although allowing the wine a few minutes in the glass can reveal greater complexity.

Producer
Founded in 1891, Cocchi Giulio is one of Piemonte’s historic names in sparkling wine and has played an important role in preserving the region’s Metodo Classico tradition.
