Controlled-temperature fermentation and regular pump-overs encourage gentle extraction, while maceration lasts approximately 22 days on average. After malolactic fermentation, each lot is matured separately in French oak barrels produced by Lafite’s own cooperage, the Tonnellerie des Domaines.
