Temperature-controlled fermentation and regular pump-overs ensure a gentle extraction of colour, aroma and tannin, while maceration lasts around 22 days on average. After malolactic fermentation, each batch is aged separately in French oak barrels produced by Lafite’s own cooperage, Tonnellerie des Domaines.
