Following meticulous parcel selection, grapes are vinified separately according to their origin and ripeness in wooden, concrete and stainless-steel tanks. Controlled-temperature fermentation and regular remontage allow for a gentle extraction of colour, aroma and tannin, while maceration lasts approximately 22 days on average. After malolactic fermentation, the individual lots are matured separately in French oak sourced from Lafite’s own cooperage.
