Combining the generous fruit of southern France with carefully selected terroirs, extended maturation and a distinctly mineral freshness, it offers both depth and elegance. The 2017 vintage reflects the estate’s long-standing commitment to handcrafted, terroir-driven wines.

Tasting Notes
The wine displays a deep, richly coloured appearance. Its complex nose opens with intense aromas of blackberry, vanilla and tobacco, complemented by the subtle nuances gained through extended oak maturation. On the palate, it is smooth and beautifully balanced, with refreshing acidity, pronounced mineral character and silky tannins that give the wine an appealing roundness. A broad, aromatic flavour profile leads into a long, fresh finish marked by impressive finesse.

With its concentration, polished tannins and careful maturation, the wine is enjoyable now but should continue to develop complexity in bottle over the coming years when stored in suitable conditions.

Production
The grapes come from Château Haut-Blanville’s 70 hectares within the Grés de Montpellier appellation, divided across five distinct terroirs near Montpellier. Over the past two decades, the estate has carefully selected individual parcels and vinifies their fruit separately, allowing the character of each site to emerge. The vineyards are farmed using organic and responsible practices, with particular attention to soil health, the surrounding environment and biodiversity. The red wine undergoes a long maceration following alcoholic fermentation, before maturing for 24 to 36 months in new oak barrels. It is then transferred to stainless-steel tanks to settle naturally for several more months prior to bottling.

Food & Serving
A natural partner for red meats, it is particularly well suited to grilled beef served with a rich, dark sauce, as well as game and mature cheeses. Its dark fruit, spice and polished tannins also make it a compelling match for chocolate cake. Serve at approximately 16–18°C. Decant for 30–60 minutes before serving to allow the wine’s complex aromas to open, especially when enjoyed in its youth.

Producer
Château Haut-Blanville was established in 1955, when Béatrice and Bernard Nivollet began making wine in the Languedoc and built the estate from the ground up.
