The juice undergoes a slow pasteurisation process: it is first warmed to 35°C, gradually raised to 72°C to eliminate yeast and unwanted microorganisms, and then slowly cooled back to 35°C. The complete process takes around 90 minutes and is designed to protect the wine’s flavour and aromatic character.
