The grapes are directly pressed at low temperature to preserve freshness, followed by a first fermentation in temperature-controlled tanks at 16–18°C. The second fermentation, or prise de mousse, takes place in bottle according to the traditional method in underground limestone galleries in the Saint-Émilion area, at approximately 15°C.
