Sauvignon Blanc is harvested by hand from August, followed by Sémillon in September. The grapes are immediately cooled and gently pressed before the must is naturally clarified. Fermentation takes place in stainless-steel tanks at low temperatures, with malolactic fermentation avoided to preserve the wine’s aromatic freshness.
