The vineyards are dry-farmed, planted without irrigation or chemical fertilisers, and yield only about 3,000–4,000 kg per hectare, resulting in highly concentrated fruit that is hand-harvested cluster by cluster. Fermentation takes place over 9 days at 23–28°C, followed by 10 days of maceration, then the wine is aged for 18 months in oak and a further year in bottle.
