The dry climate, intense sunlight, clean desert air and pronounced day-to-night temperature variation help preserve freshness while concentrating flavour. The old vines are cultivated using organic and biodynamic principles. Fermentation takes place with natural yeasts: 10% in clay amphora, 15% in concrete eggs and 75% in French oak.
