Harvest takes place by hand between mid- and late September, with deliberately limited yields. After careful destemming, the grapes undergo four days of skin maceration, followed by gentle pressing and spontaneous fermentation with indigenous yeasts. The wine matures first for six months in concrete tanks, followed by a further twelve months of ageing.
