The vines are rooted in porous morainic soils formed by fluvio-glacial deposits, gravel and deep alluvial layers, imparting freshness and a distinctive mineral character. The grapes are gently pressed before fermentation in temperature-controlled stainless-steel tanks. The wine then matures for around ten months in steel and barrels, followed by a second fermentation in bottle and approximately 30–40 months of lees ageing according to the traditional method.
