The finish is long and mouthwatering, leaving a fresh, slightly saline impression. Half of the Verdelho is gently foot-trodden and cold-macerated for three days, while the other half is pressed whole and directly; the Sercial is also pressed directly. Fermentation takes place at low temperature over several weeks using natural yeasts, preserving the wine’s purity and mineral expression.
