Made from Chardonnay and produced by a family with deep roots in Chassagne-Montrachet, it combines the appellation’s characteristic mineral freshness with the generous, textured style associated with Morgeot.

Tasting Notes
The wine shows a bright golden hue. Its aromas are poised and expressive, with notes of ripe orchard fruit, citrus, white flowers and subtle mineral tones, complemented by delicate hints of spice and pastry from its time in oak. On the palate, it is layered and rounded, offering ripe pear and apple flavours balanced by lively acidity and a long, saline finish. The texture is supple rather than heavily oaked, thanks to maturation without new barrels. Enjoyable now with a little air, it should develop additional complexity over the next 5–8 years when stored in good conditions.

Production
The vineyards lie at the foot of the celebrated Montrachet vineyards in Chassagne-Montrachet, where limestone and marl soils contribute freshness, structure and mineral character. The whole grape clusters are gently pressed in a pneumatic press, after which the must is cold-settled. Within 24 hours, it is transferred by gravity into French oak barrels, where the complete alcoholic fermentation takes place. The wine then matures for 10 months in French oak, with no new wood used, and regular bâtonnage of the fine lees to build texture and complexity.

Food & Serving
Serve lightly chilled at approximately 11–13°C, allowing the wine to open in the glass. It is an excellent match for roast chicken, veal, grilled or roasted fish, scallops, lobster and creamy poultry or mushroom dishes. A short decant of 20–30 minutes can be beneficial in its youth, although gently swirling the wine in a broad Burgundy glass is often sufficient.

Producer
Bader-Mimeur is a historic family estate situated at the foot of the Montrachet vineyards. The family’s connection with Chassagne-Montrachet dates back several generations: the Bader-Nié family owned vineyards in the area from the 17th century, while Charles Mimeur, a winemaker from Maranges, acquired Château de Chassagne-Montrachet in 1919. Since 2017, siblings Nathalie Bernard and Sébastien Fossier have directed the estate, continuing its long-standing focus on expressing the character of Chassagne-Montrachet through carefully made, traditionally matured wines.
