The must is first cooled, then kept in contact with the grape skins to extract colour and aromatic richness. Malolactic fermentation takes place spontaneously, shortly before or after the wine is transferred by gravity into new French oak barrels. The skins and seeds are gently pressed in basket presses, with small quantities of press wine incorporated into the final cuvée. The wine is aged for 18 months in new French oak barrels.
