The steep vineyards, with inclines of up to 40%, are rooted in moraine soils composed of silty-sandy gravel and abundant stones, conditions that promote slow, even ripening and clear aromatics. Harvest takes place in two stages: most of the grapes are picked in mid-October, while a selected portion remains on the vines until a late harvest in December.
