The vineyards, composed of terraces and some old-style ‘costers’ slopes, are planted with Garnacha, Garnacha Peluda and Cariñena, and are meticulously worked by hand, with Carles Ortiz even using mules, Negret and Max, to respect the fragile soils. Cariñena was harvested between September 13–15 and Garnacha between September 26–28, with around 40% whole clusters and the remainder destemmed but left as whole berries. Fermentation took place with indigenous yeasts in 3,200 L oak vats over 15 days, after which the wine was pressed and returned to barrel to finish fermentation off the skins.
