The blend is 70% Syrah, 20% Grenache Noir and 10% Carignan, all hand-harvested and destemmed. Each variety is vinified separately, beginning with a short cold pre-fermentation maceration. Fermentation takes place at controlled temperatures (up to 28°C) with selected yeasts to preserve aromatics and fruit purity.
