The Chardonnay grapes are harvested by hand at night to preserve aromatic freshness and avoid daytime heat. In the cellar, Ceraudo follows a philosophy of respect for nature: the wine is naturally fermented in barrels using only indigenous yeasts, allowing the character of the terroir to shine through. Ceraudo has long championed organic farming, taking advantage of the constant coastal winds and low humidity that make sustainable viticulture not only possible but natural. Working closely with oenologist Fabrizio Ciuffoli, the family produces a contemporary range of wines from both local and international varieties—mantonico, pecorello, greco bianco, magliocco, gaglioppo, greco nero and a touch of Cabernet Sauvignon alongside Chardonnay.
