Fermentation begins in stainless steel to preserve purity and aromatic brightness, then finishes in oak barrels, where the wine matures for 16 months (with about 25% new oak) to build texture and complexity. Regular bâtonnage—stirring of the lees twice a month on specific dates—adds creaminess and depth, before a final two-month élevage in stainless steel to refine the wine’s tension and clarity.
