All grapes—55% Xarel·lo and 45% Macabeo—are hand-harvested in a short, concentrated window and vinified by parcel in Recaredo’s own cellars. Only the first 40% of the free-run juice is used, the purest fraction, with fermentation taking place partly in oak and partly in stainless steel.
