Grapes are harvested by hand into small crates, meticulously sorted, and completely destemmed. Fermentation takes place with 21 days of maceration on the skins in temperature-controlled open oak vats, with pigeage (cap punching) carried out twice daily during the alcoholic fermentation to extract colour, aroma and fine tannins.
