The estate works with its own old vines, all classified with top A-status, and the grapes for this wine – Viosinho, Arinto and Folgazão – are harvested by hand, with Viosinho typically picked in late August, followed by Arinto and Folgazão in early September to ensure each variety is brought in at optimum ripeness. After a short maceration on the skins of around 24 hours to enhance aroma and texture, fermentation takes place in French oak barrels.
